Vermont Ski Trip

As many of you may already know, My Family loves Vermont.  I grew up very close to Southern Vermont and try to go several times a year.

It is one of the few places I truly relax, Mr. Bunny’s place to relax is always at the condo in Florida, although he too loves Vermont.  He prefers warm weather, I love the Snow and the heat!!

We had a change of travel plans due to Honey Bunny’s business so we booked a last minute trip to Vermont.  Hopefully we will get to  someplace warm and exotic soon and then to Europe, it all depends on his schedule which We have to coordinate around the schedule of our three sons.  I always prefer for us to travel together whenever possible.

As you can see in the photos, Vermont keeps their Christmas decorations up through the entire Winter Season, they look so pretty against the snow which is plentiful all season long.

I surprised my Family with a Sleigh Ride.  The lovely horses literally took us over the River and Through the Woods.

After a cozy sleigh ride we sat fireside, enjoyed hot chocolate, and roasted marshmallows.

You can’t go to Vermont in the Winter and not hit the slopes.  I prefer to Snowboard, the boys like to ski.. Actually I like to dress like a Snow Bunny and hit the Lodge for Hot Toddies!!  You know how much I like my cocktails.

My son Sam is in the top right picture, he turns 16 on Saturday, Poppy is in the bottom photo he turns 73 on Sunday and my son Teddy who is the red jacket turns 13 on February 23rd.  My boys are growing up so fast…where oh where does the time go???

My Mr. Bunny is sooooo SEXY!

We left the three boys downstairs with Grandma and Poppy aka Jojo and Poppy and hit the bar running.  They had a rockin band and we had a blast.  Mr Bunny went to the bathroom and when he returned I had a group of men around me and one was trying to get me to go on his private plane for dinner.  I asked if his pilot could take me and my husband on a plane ride where we could have dinner together…I don’t think that is what he  had in mind.  Anyway they ended up hanging out with us the rest of the night talking real estate with my husband.  I never did get on that darn plane…But at my age I was flattered I was even asked ~ tee hee.

I think this shrimp appetizer I had at the Inn was one of the best shrimp dishes I have ever tasted. It was stuffed and wrapped lightly in Prosciutto  I still have not received the recipe from them…hmmmmm and I was even kind enough to do an entire Snapfish movie on their Inn and upload  it to their Facebook page…well well, I think I just might need to get on the phone with them  ASAP..LOL

The other memorable appetizer I enjoyed and get every-time I stay there is the Gorgonzola Cheesecake with pine nuts.  It is really good and what the heck why not eat 100,000 extra calories..You only live once, right!!

GORGONZOLA CHEESECAKE WITH PINE NUTS:

REICPE:

Polenta~

1/2 Cup of Water

1/2 Cup Cornmea

1 TBSP Chopped Garlic

1 Tsp Salt

1/4 Cup Grated Asiago

Filling:

1 pound Gorgonzola

2 1/2 lbs Cream Cheese

5 Eggs

pre-heat oven to 350 degrees and cook in water bath for one hour.

Garnish with toasted pine nuts and drizzle pesto/olive oil around plate

Serve with Crackers.

Bunny’s Note ~ This is all the instructions that were given to me.  If you give this recipe a try, I would first recommend making the Polenta the way you know how.  Second whip the filling together . I haven’t made this in a few years so I am trying to remember what I did…

put the polenta in the bottom of a round spring form pan, pour the filling on top and cook in a bain marie for one hour as per the Inn’s above instructions..

Europe and The Caribbean although I am sad we didn’t get to see you this month…My heart will always belong to Vermont.

What are all of you up to this Weekend??  Any exiting plans?  We have family staying with us for a few days and we have a lot planned.  I hope to get up to the Herb Farm if time permits.  I am looking for masses of white dried flowers for a project I am working on.  I also have to get more supplies for a necklace I am designing and whenever I have time I would like to get painting some Winter Garden scenes at The Paris House.

I am also hoping to meet one of my dearest blogging friends very soon, but more on that later…..

    Ah Bunny…your trip looks like such fun. Cute photos of all of you.
    Although I don’t like the cold much anymore……brrrrrrrr. And I was really a klutz on skis. Oh well. I was good at other things. Like, as you say, apres ski. I was really good at that.
    I am much more a summer sport person. But that sleigh ride really looked inviting. Under those cozy lap robes. And with s’mores after. That I could do.

  6. Hello Bunny… you should really be on the show Life of the Rich and Famous (is that even on anymore???)… you are so gorgeous, of course all the guys would try to pick you up! The sleigh ride looks fun and so does the hot chocolate and smores… your boys (including Mr. Bunny) are all adorable!… while you are planning your trips to Europe and the Carribbean… I am planning a weekend trip to Michaels and TJ Maxx… you are such a perfect model of the latest fashions… me, I am sitting here in my jeans, as usual… but I did buy a fabulous Italian designer handbag with a gift card my sister gave me to TJ’s for Christmas at a fraction of the original cost… maybe I will do a post on it! You are so lucky to have your parents to go along with you on some of your adventures – they must love being with all of you and I’m sure it keeps them young, although based on some of your blogs they seem very young at heart. I loved your story about the men at the bar – Mr. Bunny may not leave you alone again for a while!

  10. Is that a duck???!!!??? I thought they flew here for the winter!!! What a beautiful vacation. It all looks so amazing!! I love the snow and the picturesque covered bridge….. You don’t get that here in Texas.

    On a sad note, my grandmother passed away last night. She was 100 in August, so she was ready, but it is still so sad to think of her not in our lives. Enjoy your family as you do!!!! You know how precious life is!!!!
