This is a very light and refreshing appetizer and adds a very elegant touch to any party.
Ingredients:
1lb. crab meat picked over
1/4 – 1/2 cup of mayonnaise (I prefer a lighter more lemony taste)
1 celery stalk, small dice
1 1/2 Tsp of fresh dill, chopped fine
juice of 1 lemon (optional)
salt to taste
pinch of freshly ground black pepper
4-5 heads of Belgian endive
Directions:
Gently combine all of the above ingredients (except for the endive) to make the crab salad. Cut of the base of the endive and separate the leaves. Fill them with the crab salad, cover and chill until your party.
