This is my family taken last year on vacation in Europe (they are now 15, 12 and 4) and my college Sweetheart Josh. I have been in love with this man for 23 years.

Two of our boys are in this picture, Olly is napping off to the side in his stroller. A lovely older woman from England took this photo for us.Greece was everything we dreamed it would be. Lovely and kind people, delicious fresh cuisine and a beauty that takes your breath away. I try not to pick favorites with anything, its so hard to narrow things down, there are just too many wonderful places in the World. However, Greece is unforgettable.
The food was wonderful and I was excited to try the Feta cheese in Greece, I love its tangy creamy texture mixed with the saltiness, it is a perfect combination and one of my favorites. I am a huge fan of Greek salads, so of course I needed to try the authentic version on our holiday. I realize it isn’t some exotic experiment in Gastronomy but the best foods to me are comprised of the freshest local ingredients available, simplicity, editing away unnecessary embellishments and just tasting the delicious meal. The Feta was as fresh as could be, the tomatoes were still warm from the vine, the vinaigrette was light and had the best fruity olive oil in it. If you make the following recipe please try and find the freshest and best quality produce you can.
Country Greek Salad
serves 6
4 tomatoes sliced
2 medium sized cucumbers sliced
lettuce, I like a crunchy lettuce with this, an iceberg works great
1 onion, sliced
a package of whole feta cheese broke into chunks
1 green bell pepper, thinly sliced
2-3 tablespoons of vinegar, for this I use red wine vinegar
4 tablespoons of a good fruity olive oil, William Sonoma has a great selection
Greek olives, as many as you like
salt
freshly ground pepper
1 tablespoon of oregano
(some people add capers, optional)
put lettuce and vegetables in a salad bowl
combine olive oil, vinegar, oregano, salt and pepper together in a bowl and whisk ingredients.
drizzle over salad before serving
serve with a loaf of crusty bread with more olive oil on the side for dipping. A plate of grilled squid would be a lovely addition to this meal.
Wine suggestion- A cold crisp white such as a Sauvingnon Blanc
