Yesterday we had organic free range quesadillas with all the fixings. The boys could make them up anyway they liked. It was quick and simple, I made the delicious Margaritas on Bon Bon Rose’s blog (so yummy!!). Today I was so busy running around, I took my four year old for his checkup that included 3 Vaccines, some tears and lots of hugs and kisses. Then I Ran to get my 15 year old from school then headed back down to Gladstone to pick up my 12 year old. Of course there is always Paris House business that needs tending to as well as a garden and oh well you get the point. Back to dinner, I bought some fresh fish, shrimp and lots of veggies at Whole Foods yesterday along with the remaining organic whole wheat wraps we had left over from lasts nights quesadillas so I decided more Mexican. Hurray, I love Mexican food and could eat it several nights a week.In fact I’m cooking Mexican again on Friday for my friends’ birthday, (I’ll get to that later this week. Boy oh boy do I have a secret ingrediant to make the best enchiladas you have ever had and the best part you can do it in minutes). I am really trying to be careful and eat healty delicous food especially during the week so I grilled the fish and the shrimp and just added toppings. I put out cabbage, guacamole, a chipotle cream, onions, queso freso cheese, shredded carrots, tomatoes, whole wheat tortilla wraps. They were so fresh and healthy with only a little bit of cheese. I finished with some Mexican chocolate spiced truffles.
