salmon quesadillas:
heat grill
brush Salmon with a little olive oil
season with mexican spices, ancho, adobe, etc.
salt and pepper to taste
top with slices of lime
Grill
break up salmon into chunks,
top a whole wheat organic quesadillas with salmon, shredded cheddar, or your cheese of choice
top with another quesadillas
sautee lightly in a skillet , or on the rack on your grill
cut into triangles
serve with my homemade guacamole and some lime slices
