Its time for Monday night dinner and we had a bit of a switch from our Sunday night plans. I was making steak frites yesterday, with a delicious gorgonzola truffle french fries and I couldn’t wait to eat it. Well for lunch, a very late lunch I made a shrimp coconut curry soup that was so good we couldn’t stop eating it and then moved on to some dessert and were too full to even thing about our steak frites dinner. So that is what we are having this evening. You know what it is so easy, I already have the french fries prepared and my fillet has been marinating in my homemade sauce. I’m just going to throw them on the grill and enjoy. I am baking a few peaches filled with mascarpone cheese that I have lightly sweetened and drizzled with a bit of honey and champagne and topped with a handful of almonds. Easy and delicioius. So as long as I am flexible and who isn’t that has three kids, it all comes together.
